Wheat DME

Description

This is dried malt extract (DME) that is made using a blend of wheat malt and pale barley malt. Typically, this blend is 65 to 55 percent wheat with the remainder barley. This extract adds mild wheat flavors and contributes to head retention and beer body.

Beer Styles

Since most "wheat beers" actually call for a blend of wheat and barley malt, wheat DME has approximately the correct ratio of wheat to barley for brewing these styles. Using wheat DME for all of the fermentable sugars is a good way to make an extract-only Bavarian weizen or Belgian wit. Note that Belgian wit was traditionally made using a blend of unmalted wheat with malted barley, so wheat DME (made from wheat malt) won't quite replicate this character. Wheat DME can also be used for all or most of the fermentables in a Belgian saison. A pound or so will boost head retention and body in most styles. Using wheat this way is common for English bitters and Southern English brown ales.
