American Ale II Yeast (WY1272)

Description

A clean tasting American ale yeast with a softer profile. This strain is comparable to other American ale yeasts like WY1056 and WLP001, but it tends to flocculate slightly better and have slightly lower attenuation. This will produce a higher finishing gravity, fuller mouthfeel, and rounder flavor. Wyeast suggests that this strain produces "hints of nut" and "a slightly tart finish."

This strain accentuates hop flavor, but less than WY1056. Fruitiness and hop accent are said to increase with fermentation temperatures.

This is thought to be the same strain as WLP051 California Ale V Yeast. Regardless the two strains have nearly identical descriptions. WLP051 is from Northern California and might be the house strain at Anchor Brewing Company.

This strain can be somewhat slower to start fermentation. Compared to strains like WY1056 this can result in about 12 extra hours before airlock activity begins.

Beer Styles

WY1272 is a good choice for many American ale styles. This strain works well in Cascadian dark ales, American pale ales, and rye IPAs where a generally clean fermentation profile is desired but lower attenuation can help achieve a more harmonious balance between hops and other flavors.
