California Ale Yeast (WLP001)
Description
White Labs California Ale Yeast (WLP001) is a popular strain well known for clean tasting and reliable fermentations. It is thought to produce hop-accentuated beers. With a healthy fermentation WLP001 should produce low concentrations of most beer flavor compounds – well below the sensory threshold. In particular production of the two vicinal diketones (VDK): diacetyl and 2,3-pentanedione tends to be extremely low. This strain also tends to produce very low concentrations of fusel alcohols. Ester production is low in general, no isoamyl acetate and minimal ethyl acetate.
Beer Styles
This versatile strain could be used in most styles of ale. It also has such low ester production when fermented at low temperatures that it could be used to mimic fermentation with lager yeast. This yeast is a good choice for many American styles: American Pale Ale, American IPA, American Amber Ale, and American Brown Ale. Due to its high alcohol tolerance WLP001 can also be used in higher gravity beers: American Barley Wine, English Old Ale, and Imperial IPA. Its clean and simple flavors work well in beers brewed with unusual ingredients: spice, herb, honey, and smoke flavored beers.
