Steel Cut Oats

Description

Minimally processed oats sold for cooking into oatmeal. They have been chopped up slightly with steel blades to help them cook faster. This also makes thier starches slightly more accesible when mashed. Unlike rolled oats they have not been partially cooked to pre-gelatenize starches. You will get a lot more out of your steel cut oats if you rehydrate them and cook them a little before mashing, i.e. a cereal mash. When making oatmeal they have a superior texture and richer taste than the rolled variety. It is unknown if these better qualities for eating translate into better qualities for brewing or if they are just harder to work with. These grains contribute lots of creamy protein and gummy beta-glucans. They increase mouthfeel and final gravity.
