Flaked Wheat

Description

Unmalted wheat cooked slightly and rolled out in flakes. It is pre-gelatinized for faster mashing without a cereal mash. A convenient source for unmalted wheat character in styles like Belgian witbier. Contributes a stronger wheat flavor than malted wheat along with lots of protein and body. This grain improves head retention. Will produce hazy beers even at fairly low percentages.
