Wheat Malt

Malted wheat for use in wheat beers in particular German weissbier: hefeweizen, kristallweizen. Also commonly used to aid head retention in British ales. Wheat can cause chill haze when used for more than about 20 percent of the grist. Mashing is made more challenging since wheat does not have as sturdy of a grain hull as barley. Rice hulls are a good option to help prevent stuck sparges.
