Torrified Wheat

Description

Unmalted wheat that has been air puffed to destroy the cellular structure. Processing in this way makes the grain's starches more easily accessed by mashing enzymes without a cereal mash. This is a convenient form of unmalted wheat for styles like Belgian witbier. It is thought to contribute a stronger wheat flavor than malted wheat. Contributes protein to increase body and improve head retention. Unmalted wheat such as torrified wheat produces hazy beers even at fairly low percentages.
