Honey is a highly concentrated solution of sugars in water produced by bees. The concentration of sugar in undiluted honey serves the purpose of inhibiting fermentation. Producing honey from nectar is a food preservation technique for the bees that make it. The monosaccharides glucose and fructose account most of the sugar content in honey. It also has trace amounts of vitamins and minerals. This means that honey dissolved in wort is highly fermentable. Honey has a distinctive aroma that many people find pleasant and enhances the sensation of sweet flavors. Honey is sometimes classified based on the types of flowering plants it was produced from. Wildflower honey indicates that the bees were free to collect from whatever flowers they could find and the exact composition is unknown. Clover and orangeblossom honeys are popular honey varietals for brewers and mead makers. Heat and boiling will evaporate honey aromatics and will mute or remove varietal character.
